Joyce's Pie Crust

2 1/4 cups flour
3/4 tsp salt
3/4 cups shortening
3 TB butter
1/3 cup plus 1 TB ice water
1 egg white

Combine flour and salt with shortening and butter until small particles appear...Beat ice water and egg white until foamy. Stir into flour mixture with a fork.
Roll out on a flour covered board.

This will make one double crust pie.

For pie shells, bake at 450 deg About 12 min.
