Hollie's Bread

3 T yeast
1/3 C warm water
1 tsp sugar
1/2 C sugar
3 C boiling hot water
1 can of evaporated milk (12 oz can)
2 C cold water
2 T salt
1/3 C virgin olive oil
3 eggs
10-11 C flour

In a small bowl, mix yeast, warm water and tsp of sugar. Allow to rise.

In a very large (very large) mixing bowl, combine boiling water, cold water, evaporated milk, salt, 1/2 C sugar, olive oil and eggs.

Mix thoroughly. Stir in yeast mixture. Gradually add flour (I use half wheat flour and half white flour) Mix flour in with spoon for as long as possible then hand mix in last cup or two of flour with hand. (dough will be very sticky but I find that it works better the less "firm" you have it, so sticky is good) Add flour until dough is sticky but firm. Cover with towel and let dough rise until doubled in size, punch down and let rise for another 15-20 minutes.

Preheat oven to 350 degrees.
Grease and flour pans.
Form dough into loaves (usually makes about 6-7 depending on size)
Place loaves in pans and bake for 45 minutes.
Bread will be golden brown, brush with butter.
