Like Texas Roadhouse Rolls

1 pkg. yeast
½ cup warm water
2 cups milk
½ cup sugar
½ cup honey
8 cups flour
2 Tbls. melted butter
2 eggs
2 tsp. salt

Soften yeast in warm water with a teaspoon of sugar.  Scald milk; cool to lukewarm.  Add yeast, sugar, honey and enough flour to make medium batter.  Beat thoroughly.  Let stand until light and foamy.  Add melted butter (cooled), eggs, and salt.  Beat well.  Add enough flour to form soft dough.  Sprinkle small amount of flour on counter and let dough rest.  Meanwhile, clean and dry bowl; grease clean surface of bowl.  Knead dough until smooth and satiny.  Put in greased bowl; turn over to grease top.  Cover, let rise in warm place until double in bulk.  Punch down.  Turn out on floured board.  Divide into portions for shaping; let rest 10 minutes.  Shape dough into desired forms.  Place on greased baking sheets.  Let rise until doubled.  Bake at 375 degrees for 10 minutes; reduce temperature to 350 degrees for 10 to 15 minutes more.

French Bread

½  cup lukewarm water
2 Tbls. dry yeast

Mix yeast and water together and let stand for 15 minutes.
Add the following ingredients, in order given.

2 cups warm water     
1/3 cup oil
3 Tbls. sugar
1 Tbls. salt
6-8 cups all-purpose or bread flour

Mix well by hand or in a Bosch-like bread mixer bowl, and stir by hand or turn on mixer every 10 minutes for 1 hour.
For French Bread:   
Put on floured board.
Roll into 2 loaves, seam side down.
Make 3 – ½ inch deep cuts into each loaf.
Spread egg white on top and if desired, poppy or sesame seeds.
Place each loaf on separate greased cookie sheets.  Let raise 30 minutes to one hour.  Bake at 350 degrees for 20 minutes, or until light brown.
For Bread Sticks:
Roll with hands into (about 48) bread sticks.
Dip in 1 cube melted butter & garlic salt, or one minced garlic.
Place length wise, on cookie sheet and sprinkle with Parmesan Cheese, liberally.  Let raise for one hour and bake at 350 degrees for 15-20 minutes, or light brown.  
For Hard Rolls:
Form into 24 round balls, place on greased cookie sheet and raise for one hour.  Bake in 350 degree oven until brown.
Makes 2 loaves of bread, 24 bread sticks, or 24 hard rolls

Best Ever Biscuits

This is my favorite Biscuit recipe.  They are so buttery and flakey.  The cinnamon biscuit’s are definitely a family favorite in my home.

3 cups all-purpose flour
¼ cup instant powdered milk
1/8  cup baking powder
1/8 cup sugar
1 tsp. salt
1 tsp. cream of tartar
1 cup butter-flavor crisco
3 Tbls. butter        
3/4 – 1 cup cold water

 Mix in order given.  Use pastry blender when adding the crisco.  Knead five minutes with hands.  Roll out and cut into 3 inch circles, two inches thick.  Bake in 375 degree oven for 20 minutes or until lightly browned.

Makes about 24 biscuits.

**Variation**

Cinnamon Biscuits 

(My Creation)

Use biscuit recipe and roll out into rectangle . Spread with soft butter and sprinkle with cinnamon, sugar and brown sugar.  Roll up like jelly roll and cut with biscuit cutter, two inches thick.  

Bake at 375 degrees for 25-30 minutes
Frost with white frosting

Makes 18 cinnamon biscuits

Hollie's Bread

3 T yeast
1/3 C warm water
1 tsp sugar
1/2 C sugar
3 C boiling hot water
1 can of evaporated milk (12 oz can)
2 C cold water
2 T salt
1/3 C virgin olive oil
3 eggs
10-11 C flour

In a small bowl, mix yeast, warm water and tsp of sugar. Allow to rise.

In a very large (very large) mixing bowl, combine boiling water, cold water, evaporated milk, salt, 1/2 C sugar, olive oil and eggs.

Mix thoroughly. Stir in yeast mixture. Gradually add flour (I use half wheat flour and half white flour) Mix flour in with spoon for as long as possible then hand mix in last cup or two of flour with hand. (dough will be very sticky but I find that it works better the less "firm" you have it, so sticky is good) Add flour until dough is sticky but firm. Cover with towel and let dough rise until doubled in size, punch down and let rise for another 15-20 minutes.

Preheat oven to 350 degrees.
Grease and flour pans.
Form dough into loaves (usually makes about 6-7 depending on size)
Place loaves in pans and bake for 45 minutes.
Bread will be golden brown, brush with butter.
